It has a distinctive russet red color which comes from age-old production methods. It's great in a cauliflower cheese.
Red Leicester is a mild, sweet cheese that is great in a casserole dish with cauliflower. It has been made in England since the 1700s and is traditionally eaten at Christmas. The cheese is made with traditional starter cultures, West Country milk and just the tiniest amount of annatto which gives it its distinctive russet red colour. Ageing it for around four months results in a smooth cheese that’s perfect for delicious recipes like macaroni and cheese or a pizza calzone.
